(Old Thread): Casseroles (and other foodstuffs) and general discussion.

 So how many people love a good casserole? I just recently started appreciating a good casserole. They're filling, easy to cook, last a while, and you can incorporate more veggies into your diet by covering up their flavor with other, better tasting ingredients.  I came across a veggie casserole recipe.  It was good, but the kid didn't like the texture.  So then I tried a stuffing based casserole which went much better.  So I combined a couple recipes and tweaked it a bit with some other ingredients and came up with a pretty decent regular dinner fare. Here's the veggie casserole recipe: I didn't use bean sprouts. I substituted a can of mushrooms. I also used frozen California blend veggies, since it has both broccoli and cauliflower in it. I made other tweaks, like using a whole 10oz can of cream of mushroom/chicken and two eggs.
